Italico is a very special Riesling. We produce it by harvesting the grapes in different phases: part of the grapes are harvested when they are ripe, part of the harvest is overripe, they remain in the vineyard at least two weeks longer than the first, we collect them in the box and let them dry. We make the vinification of the three grapes separately and finally we make a cut of the three wines obtained before bottling. With this vinification we are able to extract very particular aromas and aromas from the Italian Riesling, which in itself is not a very characterizing vine.

this wine is produced using 25% of over-ripe grapes and 25% of dried grapes). Colour is straw-yellow with golden highlights; complex nose with mineral and tropical fruits notes; on palate it’s well-rounded and very persistent.
It is best served at a 10-12 °C temperature and teams perfectly with baccalà in tomato and spring onion sauce.
Aging potential: 2-3 years.
